Today, with the growing interest in organic and locally sourced food, we can reconnect with these traditions by focusing on fresh, seasonal, and healthy products from our land.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Traditional Carnival sweets<\/h2>\n\n\n\n<p>During this festive and joyful time, sweets take center stage. <em>Bu\u00f1uelos de viento<\/em>, also known as Lent fritters, are a classic Carnival treat in Catalonia. These delicious fried pastries are made with flour, eggs, milk, and sugar\u2014simple ingredients that create an unmistakable flavor. At <strong>Mitjavila Slow Shop<\/strong>, we offer locally sourced, organic flour, sugar, eggs, and milk, perfect for making bu\u00f1uelos at home.<\/p>\n\n\n\n<p>Another traditional sweet is <em>orelles de Carnaval<\/em> (Carnival ears), found in different versions across the region. Their crispy, sweet dough is yet another example of how culinary traditions are kept alive year after year.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Coca de llardons: a Carnival essential<\/h2>\n\n\n\n<p>Another much-loved treat during this time is <em>coca de llardons<\/em>, a classic of Carnival and <em>Dijous Gras<\/em> (Fat Thursday). This pastry is known for its intense flavor and crunchy texture, thanks to the llardons (pork cracklings) mixed into the dough.<\/p>\n\n\n\n<p>Here\u2019s a simple recipe to prepare a delicious <em>coca de llardons<\/em> using local and organic ingredients:<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Coca de llardons recipe<\/h3>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 sheet of puff pastry<\/li>\n\n\n\n<li>150 g high-quality pork cracklings<\/li>\n\n\n\n<li>50 g organic sugar<\/li>\n\n\n\n<li>1 organic egg (for brushing)<\/li>\n\n\n\n<li>Pine nuts<\/li>\n\n\n\n<li>A pinch of cinnamon (optional)<\/li>\n<\/ul>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Finely chop or grind the pork cracklings using a food processor or by hand.<\/li>\n\n\n\n<li>Roll out the puff pastry on a floured surface and mentally divide it into two equal halves.<\/li>\n\n\n\n<li>Spread the cracklings over one half of the pastry.
