Organic panellets from Mitjavila Slow Shop

In this edition of our weekly blog, we present a delicious traditional Catalan recipe: Organic Panellets with Nuts.

Panellets are small sweets traditionally enjoyed during La Castanyada, a Catalan celebration that coincides with All Saints’ Day. These treats are made with a base of almonds and sugar and come in many varieties. Today, we bring you a version made with locally sourced, organic nuts, making them a delicious and sustainable choice.

Ingredients:

  • 250 g locally sourced organic almonds (available at Mitjavila Slow Shop)
  • 200 g organic cane sugar (available at Mitjavila Slow Shop)
  • 1 egg
  • Organic pine nuts for decoration (available at Mitjavila Slow Shop)
  • Crunchy organic almond pieces for decoration (available at Mitjavila Slow Shop)
  • Lemon zest
  • A pinch of salt (available at Mitjavila Slow Shop)

Instructions:

  1. Preheat the oven to 180 °C (350 °F).
  2. Grind the organic almonds until you obtain a fine flour, using a blender or food processor. Add the lemon zest and a pinch of salt and mix well.
  3. In a bowl, combine the almond flour with the organic cane sugar.
  4. Lightly beat the egg and add it to the almond and sugar mixture. Mix until you obtain a smooth, homogeneous dough.
  5. Shape the dough into small balls and place them on a baking tray lined with parchment paper.
  6. Gently press each ball to slightly flatten it and decorate with organic pine nuts and crunchy organic almond pieces, pressing lightly so they stick.
  7. Bake for 12–15 minutes, or until the panellets are lightly golden.
  8. Remove from the oven and let them cool before enjoying.
